Protein Overnight Oats with Whey & Berries
Jewel-bright berries tumbled over the thick, creamy oats with a crunchy drift of flaked almonds catching the light on top.
Ingredients
- 160 g rolled oats
- 40 g vanilla whey protein powder
- 400 ml whole milk or oat milk
- 200 g plain Greek yogurt
- 1 tbsp chia seeds
- 2 tbsp honey or maple syrup
- 150 g mixed berries, fresh or defrosted frozen
- 30 g flaked almonds or granola, to top
Method
- Whisk the whey protein powder into the milk in a jug until fully dissolved and smooth, with no lumps clinging to the sides.
- In a large bowl, combine the oats, Greek yoghurt, chia seeds and honey. Pour over the protein milk and stir well until everything is loose and evenly mixed.
- Divide between two jars or bowls with lids and give each a final stir.
- Cover and refrigerate overnight, or for at least 4 hours, until the oats are thick and creamy and have drunk up all the liquid.
- In the morning, stir each jar through. If you like a looser consistency, loosen with a splash more milk until it ripples off the spoon.
- Spoon the berries over the top and finish with a generous scatter of flaked almonds or granola, eaten straight from the jar.
