Cottage Cheese & Blueberry Protein Bowls

Ingredients
- 0.5 tsp cinnamon
- 500 g full-fat cottage cheese
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 30 g granola or toasted oats
- 2 tbsp honey or maple syrup
- 200 g fresh blueberries
- 30 g flaked almonds
Method
- Tip the cottage cheese into a bowl and stir through the vanilla extract, cinnamon, and lemon zest until the spice is evenly streaked through the curds.
- Divide between two shallow bowls, smoothing the surface so it sits in a generous layer.
- Scatter the blueberries over the top — pile them on, you want every spoonful to catch a few.
- Drizzle each bowl with honey or maple syrup, letting it pool around the fruit.
- Finish with the granola and flaked almonds scattered over the top for crunch and serve straight away, or chill for up to 2 hours before eating.
