Banana & Peanut Butter Smoothie Bowl

Method

  1. Tip the frozen bananas, peanut butter, lactose-free milk and vanilla extract into a blender and blitz until thick and smooth, about 1-2 minutes, stopping to scrape down the sides as needed. The consistency should hold a spoon upright — thicker than a drinkable smoothie. Add a splash more milk only if the blades are struggling.
  2. Spoon the mixture into two bowls and smooth the surface with the back of the spoon.
  3. Scatter the rolled oats and pumpkin seeds across the top, then arrange the sliced strawberries and blueberries in clusters so every spoonful gets a bit of fruit.
  4. Drizzle with maple syrup and serve immediately, before the base starts to soften.
