Banana & Peanut Butter Smoothie Bowl
Glossy ribbons of maple syrup over the pale banana base, jewel-bright berries clustered on top and pumpkin seeds catching the light.
Ingredients
- 2 tbsp rolled oats
- 2 tbsp peanut butter, smooth
- 1 tbsp pumpkin seeds
- 100 ml lactose-free milk
- 1 tbsp maple syrup
- 3 ripe bananas, frozen
- 1 tsp vanilla extract
- 100 g fresh strawberries, hulled and sliced
- 50 g fresh blueberries
Method
- Tip the frozen bananas, peanut butter, lactose-free milk and vanilla extract into a blender and blitz until thick and smooth, about 1-2 minutes, stopping to scrape down the sides as needed. The consistency should hold a spoon upright — thicker than a drinkable smoothie. Add a splash more milk only if the blades are struggling.
- Spoon the mixture into two bowls and smooth the surface with the back of the spoon.
- Scatter the rolled oats and pumpkin seeds across the top, then arrange the sliced strawberries and blueberries in clusters so every spoonful gets a bit of fruit.
- Drizzle with maple syrup and serve immediately, before the base starts to soften.
