Sticky Miso Aubergine

Glistening mahogany aubergine wedges slumped over fluffy jasmine rice, the sticky glaze pooling at the edges, scattered with toasted sesame and emerald spring onion.

  1. Whisk the miso, mirin, honey and soy in a small bowl until thick, glossy and lump-free. This is your lacquer — taste it, it should read savoury-sweet with a salty backbone from the miso.
  2. Score the cut faces of the aubergine wedges in a shallow crosshatch and season with salt and pepper. The salt draws moisture to the surface so the wedges char rather than steam.
  3. Heat the vegetable oil in a wide cast-iron or stainless pan over high heat until it shimmers. Lay the wedges cut-side down in a single layer — don't crowd the pan. If they're shoulder to shoulder, water comes out and you've stewed them instead of charring them. Work in two batches if you need to.
  4. Leave them completely alone for 3–4 minutes until the underside is deeply bronzed and pulling away cleanly from the pan. Flip and char the second cut face for another 3 minutes. You want mahogany, not timid gold.
  5. Drop the heat to medium. Spoon roughly two-thirds of the miso glaze over the aubergine and turn the wedges once, cooking for 2–3 minutes until the glaze tightens to a sticky lacquer and the flesh is meltingly tender right through. A skewer should slide in with no resistance.
  6. Lift the aubergine onto a warm plate. Splash 2 tablespoons of water and the remaining glaze into the hot pan, scraping up the sticky bits, and swirl for 20–30 seconds until it turns into a glossy pan sauce — that's your spoon-over. Taste it: most of the salt comes from the miso and soy, but a final crack of pepper ties it together.
  7. Meanwhile, heat the rice pouches to packet instructions and fluff into warmed bowls.
  8. Pile the sticky aubergine over the jasmine rice, spoon the pan sauce over the top, and drizzle with the sesame oil. Scatter the spring onions and toasted sesame seeds, and squeeze a lime wedge generously over each bowl — the acid lifts the whole thing out of sweet-salty into something properly alive.
